Super soft and light brioche buns. Use them for your burgers, or eat them as-is!

Ingredients

  • 1/2 cup (120g) water, warm

  • 1/4 cup (60g) milk, warm

  • 1 tsp (3g) yeast

  • 1.5 (19g) tbsp sugar

  • 1 egg, beaten

  • 1.5 (190g) cup bread flour

  • 1/4 (31g) cup all-purpose flour

  • 0.5 (3g) tsp salt

  • 1.5 (21g) tbsp butter, softened, room temp.

  • 1 tbsp (9g) sesame seeds (optional)

  • Egg Wash
  • 1 tbsp (15g) milk

  • 1 egg white

Directions

  • Stir water, milk, yeast, and sugar together in a small bowl. Let sit for about 5 minutes.
  • Combine the flours, salt, and butter in a mixing bowl. Mix until small crumbs are formed.
  • Add the yeast mixture and egg. Mix well.
  • Knead until dough comes together, for around 15 minutes.
  • 1st rise: Place dough in a greased bowl and cover. Proof for an hour.
  • After the 1st rise, punch down the dough and divide into 4 pieces. *Note
  • Form each piece into a ball and flatten slightly.
  • 2nd rise: Place buns in a baking tray, cover, and proof for around 30 minutes. Preheat oven to 200℃.
  • Make the egg wash by stirring the egg white and milk together.
  • Brush the buns with the egg wash, and sprinkle with sesame seeds if preferred.
  • Place buns in oven. Dial the temperature down to 180℃ and bake for around 15-20 minutes, or until slightly browned.

Notes

  • Use a kitchen scale to be able to divide each piece equally.
