I love coffee. I love bread. Why not get the best of both worlds?

Ingredients

  • 1.5 cups (190g) bread flour

  • 2 tbsp (25g) granulated sugar

  • 1/2 tsp (3g) salt

  • 1/2 cup (120g) milk, lukewarm

  • 1 tsp (3g) dry yeast

  • 2 tbsp (30g) butter, softened, room temp.

  • Topping
  • 1 tsp (5g) water, warm

  • 1 tsp (3g) instant coffee powder

  • 2 tbsp (30g) butter, softened, room temp.

  • 2 tbsp (25g) granulated sugar

  • 1 egg, beaten, room temp.

  • 1/3 cup (37g) cake flour

  • Filling
  • 4 x 10g salted butter, frozen

Directions

  • Make the Dough
  • Combine flour, sugar, and salt in a mixing bowl.
  • Make a well and pour in milk. Add the yeast and let sit for around five minutes. Mix all the ingredients well.
  • Knead until dough comes together, for around 15 minutes.
  • Add butter. Continue to knead until the butter becomes incorporated into the dough, for around 5 minutes.
  • 1st rise: Place dough in a greased bowl and cover. Proof for an hour.
  • Make the Topping
  • Stir water and coffee powder together. Set aside.
  • In a small bowl, cream butter and sugar together.
  • Add egg and mix well.
  • Add coffee mixture, and continue to mix until homogeneous.
  • Add cake flour. Fold it into the mixture until fully combined.
  • Transfer to a small piping bag. *Note 1
  • Prepare the Buns
  • After the 1st rise, punch down the dough and divide into 4 pieces. *Note 2
  • Form each piece into a ball, then flatten slightly.
  • Insert 10g butter into each piece. Pull all four ends of the dough into the center and pinch the seams. Form it back into a ball again and place in a baking tray.
  • 2nd rise: Cover the baking tray and proof for around 30 minutes.
  • Bake the Buns
  • Preheat oven to 180℃.
  • After the 2nd rise, pipe the topping onto the top half of the buns, in a spiral pattern, starting from the center going out.
  • Place buns in oven. Dial the temperature down to 160-170℃ and bake for around 15 minutes, until the topping covers the whole bun and solidifies.

Notes

  • 1: No piping bag? Use a sandwich bag and cut a small hole on one corner.
  • 2: Use a kitchen scale to be able to divide each piece equally.
