These guilt-free cookies have 4 times more protein* than the average chocolate chip cookie. Yay!
*1 protein cookie contains 4.4g of protein.

Ingredients

  • 1/2 cup (120g) peanut butter *Note 1

  • 1/4 cup (50g) zero-calorie sweetener *Note 2

  • 1/4 tsp (1.5g) salt

  • 1 egg

  • 1 tsp vanilla extract

  • 1/4 tsp (1.5g) baking soda

  • 2tbsp+2tsp (40g) vanilla whey protein powder

  • 2tbsp+2tsp (40g) soy flour

  • 4 tbsp (60g) chocolate chips

Directions

  • Preheat oven to 160℃.
  • Combine peanut butter, sweetener, salt, egg, and vanilla extract in a bowl.Protein Cookie Recipe Step 1
  • Mix until homogeneous. As the ingredients come together, the mixture will be quite sticky.Protein Cookie Recipe Step 2
  • Add baking soda to the mixture.
  • Add protein powder and soy flour.Protein Cookie Recipe Step 4
  • Fold in ingredients using a spatula. It will be hard to mix, but everything will eventually come together as you continue to fold.Protein Cookie Recipe Step 5
  • Fold in chocolate chips.Protein Cookie Recipe Step 6
  • Arrange cookies in a baking tray. Use a measuring spoon to form cookie dough into a ball. (1 tbsp dough = 1 cookie)Protein Cookie Recipe Step 8
  • Slightly flatten each piece by using your fingers, as the cookie dough will not spread out in the oven.Protein Cookie Recipe Step 9
  • Place cookies in preheated oven. Bake for five minutes or until sides are browned.
  • Bring out cookies from the oven and leave them on the tray for around two to three minutes.Protein Cookie Recipe Step 10
  • Transfer cookies to cooling rack and let them cool completely. Enjoy!
