Ingredients
1.5 cups (190g) bread flour
2 tbsp (25g) granulated sugar
1/2 tsp (3g) salt
1/2 cup (120g) milk, lukewarm
1 tsp (3g) dry yeast
2 tbsp (30g) butter, softened, room temp.
- Topping
1 tsp (5g) water, warm
1 tsp (3g) instant coffee powder
2 tbsp (30g) butter, softened, room temp.
2 tbsp (25g) granulated sugar
1 egg, beaten, room temp.
1/3 cup (37g) cake flour
- Filling
4 x 10g salted butter, frozen
Directions
- Make the Dough
- Combine flour, sugar, and salt in a mixing bowl.
- Make a well and pour in milk. Add the yeast and let sit for around five minutes. Mix all the ingredients well.
- Knead until dough comes together, for around 15 minutes.
- Add butter. Continue to knead until the butter becomes incorporated into the dough, for around 5 minutes.
- 1st rise: Place dough in a greased bowl and cover. Proof for an hour.
- Make the Topping
- Stir water and coffee powder together. Set aside.
- In a small bowl, cream butter and sugar together.
- Add egg and mix well.
- Add coffee mixture, and continue to mix until homogeneous.
- Add cake flour. Fold it into the mixture until fully combined.
- Transfer to a small piping bag. *Note 1
- Prepare the Buns
- After the 1st rise, punch down the dough and divide into 4 pieces. *Note 2
- Form each piece into a ball, then flatten slightly.
- Insert 10g butter into each piece. Pull all four ends of the dough into the center and pinch the seams. Form it back into a ball again and place in a baking tray.
- 2nd rise: Cover the baking tray and proof for around 30 minutes.
- Bake the Buns
- Preheat oven to 180℃.
- After the 2nd rise, pipe the topping onto the top half of the buns, in a spiral pattern, starting from the center going out.
- Place buns in oven. Dial the temperature down to 160-170℃ and bake for around 15 minutes, until the topping covers the whole bun and solidifies.
Notes
- 1: No piping bag? Use a sandwich bag and cut a small hole on one corner.
- 2: Use a kitchen scale to be able to divide each piece equally.
