Oven-Grilled Liempo (Pork Belly)

Ingredients
250g pork belly, cut crosswise into 1cm-thick slices
3 tbsp (45g) soy sauce
2 tbsp (30g) lemon juice
2 tbsp (28g) minced garlic
1 tsp (3g) ground black pepper
Directions
- Prepare marinade by combining soy sauce, lemon juice, garlic, and black pepper in a medium bowl.
- Add the pork belly into the marinade. Cover the bowl and refrigerate for at least three hours.
- Preheat oven at 190℃. Bring out the marinade and let sit for around five minutes.
- Place the pork on the tray and bake for 8 minutes.
- Baste the pork with marinade and bake it further for 4 minutes.
- Flip the pork slices over, baste with marinade, and bake for another 8 minutes.
- Repeat Step 5, then turn up the temperature to 230℃.
- Switch dial to broil setting, and leave for 5 more minutes.
- Bring out the pork slices and transfer them to a chopping board. Let sit for about five minutes.
- Chop the pork slices into smaller chunks, as pictured below.
Serve with rice (and veggies to balance it out lol). Enjoy!
