Ingredients
1/4 cup (60g) butter, softened, room temp.
1/4 cup (50g) granulated sugar
1 egg yolk
2 cups (254g) bread flour (+2-4 tbsp for kneading)
5 tbsp (18g) potato flakes *Note 1
1 tbsp (6g) milk powder *Note 2
1 tsp (3g) dry yeast
1/2 tsp (3g) salt
1 cup (240g) water, lukewarm
100g cheese block, cut into 10 sticks
- Egg Wash
1 egg white
1 tbsp (15g) milk
- Topping
2 tsp (10g) butter, melted
1 tbsp (13g) granulated sugar
Directions
- Make the Dough
- Cream butter & sugar in a large bowl.
- Mix in egg yolk.
- Combine flour, potato flakes, milk powder, and yeast in a separate bowl.
- Gradually add the combined dry ingredients and water to the egg yolk mixture.
- Add salt and mix well.
- Knead until dough comes together (dough will be sticky), for around 15 minutes. *Note 3
- 1st rise: Place dough in a greased bowl and cover. Proof for an hour.
- Prepare the Egg Wash
- Whisk egg white and milk in a small bowl. Set aside.
- Prepare the Cheese Rolls
- After the 1st rise, punch down the dough and divide into 10 pieces. *Note 4
- Flatten each piece with a rolling pin or using your fingers. Place cheese stick at one edge and roll. Use a dough scraper to be able to roll the dough properly (as it will tend to stick to the surface). Seal properly by pinching the ends of the dough.
- 2nd rise: Place rolls in a baking tray, cover, and proof for around 30 minutes.
- Bake the Cheese Rolls
- Preheat oven to 180℃.
- After the 2nd rise, brush rolls with egg wash.
- Place rolls in oven and dial the temperature down to 160-170℃. Bake for around 20 minutes, or until slightly browned.
- Let the rolls cool for around 10 minutes. Brush with melted butter and sprinkle with sugar.

Notes
- 1: Equivalent to instant mashed potato.
- 2: No milk powder? Substitute with 1/4 cup milk and reduce water to 3/4 cup.
- 3: If you’ve been kneading for a while and the dough still hasn’t come together, gradually add more flour.
- 4: Use a kitchen scale to be able to divide each piece equally.
