Lugaw (Arroz Caldo)

If rice porridges across the globe were to be ranked, lugaw would definitely be god-tier.

Ingredients

  • 800g chicken stock
    • sub: 2 chicken boullion cubes + water

  • 2tbsp (30g) olive oil

  • 1/4 garlic, chopped

  • 1/2 large onion, chopped

  • 1tbsp (15g) ginger paste (or thin slices)

  • 1tbsp (15g) fish sauce

  • [Optional] 100g salad chicken

  • 1/2 cup (135g) uncooked rice

  • 1 chicken boullion cube *Note

  • Salt to taste

  • Toppings
  • 1/4 garlic, chopped & fried (or 1tbsp garlic bits)

  • 2tsp spring onion, chopped

  • 2 boiled eggs

Directions

  • Sautée onion, garlic, ginger in olive oil.
  • Add fish sauce. Mix well.
  • [Optional] Add salad chicken and toss well.
  • Add rice. Stir well.
  • Add chicken stock and mix well. Bring to a boil.
  • Simmer for 40 minutes or until it thickens to desired consistency. Stir from time to time.
  • Add boullion cube and mix well. *Note
  • Add salt to taste.
  • Serve while hot. Top with garlic bits, spring onion, and boiled egg.

Notes

  • Skip Step 7 if boullion cubes are to be used as sub for chicken stock.
