Oven-Grilled Liempo (Pork Belly)

This is probably the easiest Filipino pork dish to make!

Ingredients

  • 250g pork belly, cut crosswise into 1cm-thick slices

  • 3 tbsp (45g) soy sauce

  • 2 tbsp (30g) lemon juice

  • 2 tbsp (28g) minced garlic

  • 1 tsp (3g) ground black pepper

Directions

  • Prepare marinade by combining soy sauce, lemon juice, garlic, and black pepper in a medium bowl.
  • Add the pork belly into the marinade. Cover the bowl and refrigerate for at least three hours.
  • Preheat oven at 190℃. Bring out the marinade and let sit for around five minutes.
  • Place the pork on the tray and bake for 8 minutes.
  • Baste the pork with marinade and bake it further for 4 minutes.
  • Flip the pork slices over, baste with marinade, and bake for another 8 minutes.
  • Repeat Step 5, then turn up the temperature to 230℃.
  • Switch dial to broil setting, and leave for 5 more minutes.
  • Bring out the pork slices and transfer them to a chopping board. Let sit for about five minutes.
  • Chop the pork slices into smaller chunks, as pictured below.
